Many people just fingerspell the word "gym." The general sign for "gym" involves a modified "X" handshape, where the thumb is pressed up against the bent index finger, or a "G" handshape. The hands, in either of these handshapes, are positioned up near the shoulders and then circled in the air several times. People use this sign everywhere when talking about places to exercise, PE classes, or workout rooms. You can add other signs to show what kind of gym you mean. Some people might add "school" or "fitness" before "gym" to be more clear about which type they're talking about.
